phycobiliproteinsarewater-soluble,sotheycannotexistwithinthemembranelike
carotenoidscan.Instead,phycobiliproteinsaggregatetoformclustersthatadheretothemembranecalledphycobilisomes.Phycocyaninisacharacteristiclightbluecolor,absorbing
orangeandredlight,particularlynear620nm(dependingonwhichspecifictypeitis),andemitsfluorescenceatabout

kyanos"whichmeansasomewhatdifferentcolor:"darkblue".Theproductphycocyanin,producedbyAphanizomenon
flosaquaeandspirulina,isforexampleusedinthefoodandbeverageindustryasthenaturalcoloringagent'LinaBlue'
andisfoundinsweetsandicecream.
Thephycobiliproteinsaremadeoftwosubunits(alphaand
beta)havingaproteinbackbonetowhich1-2lineartetrapyrrolechromophoresarecovalentlybound.
C-phycocyaninisoftenfoundincyanobacteriawhichthrive
aroundhotsprings,asitcanbestableuptoaround70°C,
withidenticalspectroscopic(lightabsorbing)behavioursat
20and70°C.Thermophilescontainslightlydifferentamino
acidsequencesmakingitstableunderthesehigher
conditions.Molecularweightisaround30,000Da.Stabilityof
thisproteininvitroatthesetemperatureshasbeenshowntobesubstantiallylower.Photo-spectralanalysisoftheproteinafter1minexposureto65°C
